Bean Soup Recipe
Ingredients
| Beans | 2 Cup (16 tbs), dried | |
| Ham bone - 1 or 1 1/2 lb. ham butt | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Celery leaves | 1 Cup (16 tbs), chopped | |
| Canned tomatoes - 1 quarter | ||
| Potatoes | 3/4 Cup (16 tbs), diced | |
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
GETTING READY
1. Wash the beans.
MAKING
2. In a saucepan add beans with 6 cup water. Boil for 2 minutes.
3. Take off from heat. Keep aside for 1 hour.
4. Simmer the beans for about 2 hours in the same water. Add more water if required.
5. In another vessel simmer ham in water covering it.
6. Skim the scum from broth.
7. Add beans and mix.
8. Add remaining ingredients and simmer the potatoes for about 20 minutes.
SERVING
9. Serve hot.
