Ingredients

 1 pound Yankee beans, lima beans, or chick peas
 Olive oil1/2 Cup (16 tbs)
 Onions2 Large, chopped
 Garlic2 Clove (5gm), minced
 Pepper1
 1 6 ounce can tomato puree or 1 pound can peeled tomatoes
 Water3 Quart
 Mint sprig1
 Salt To Taste

Directions

Soak beans overnight in water to cover.
Next day add oil, onions, garlic, pepper, and tomato puree or tomatoes to the 3 quarts water and bring to a boil.
Add drained beans.
Simmer for about 2 hours or until beans are tender.
In last 15 minutes of cooking add mint and salt.
