Bean Soup Recipe
Ingredients
| 1 pound Yankee beans, lima beans, or chick peas | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Onions | 2 Large, chopped | |
| Garlic | 2 Clove (5gm), minced | |
| Pepper | 1 | |
| 1 6 ounce can tomato puree or 1 pound can peeled tomatoes | ||
| Water | 3 Quart | |
| Mint sprig | 1 | |
| Salt | To Taste | |
Directions
Soak beans overnight in water to cover.
Next day add oil, onions, garlic, pepper, and tomato puree or tomatoes to the 3 quarts water and bring to a boil.
Add drained beans.
Simmer for about 2 hours or until beans are tender.
In last 15 minutes of cooking add mint and salt.
