Bean Medley Soup Recipe

Ingredients
1 tbsp (15 ml) butter
2 onions, finely sliced
1 garlic clove, finely sliced
14 oz (398 ml) canned lima beans
14 oz (398 ml) canned chickpeas
19 oz (540 ml) canned tomatoes
2 tbsp (30 ml) tomato paste
1/2 tsp (2 ml) oregano
1/2 tsp (2ml)salt
1/2 tsp (2 ml) pepper
Directions
– In a stove-top casserole, heat butter and cook onions and garlic. Add beans and chick peas and stir. Add tomatoes and tomato paste. Season with oregano, salt and pepper. Simmer for 20 minutes.
