Ingredients

 1 teaspoon rice wine or dry sherry
 1 teaspoon minced fresh ginger root
 Ground pork1/3 Pound (Marinade:)
 Soy sauce2 Tablespoon (Seasoning sauce:)
 Salt1 Teaspoon (Seasoning sauce:)
 Chicken broth1/3 Cup (16 tbs) (Seasoning sauce:)
 Water2/3 Cup (16 tbs) (Seasoning sauce:)
 Cornstarch2 Teaspoon (Seasoning sauce:)
 Vegetable oil6 Tablespoon (Seasoning sauce:)
 Garlic2 Clove (5gm), minced (Seasoning sauce:)
 1 tablespoon hot bean sauce
 Bean curd square5 (Seasoning sauce:)
 5 chopped dried red peppers, if desired
 Green onion2 Tablespoon, chopped (Seasoning sauce:)
 Sesame oil1 Teaspoon (Seasoning sauce:)
 1 teaspoon Peppersalt

Directions

Combine marinade ingredients in a small bowl.
Add ground pork; mix well.
Let stand 10 minutes.
Combine ingredients for seasoning sauce in a small bowl.
Mix well and set aside.
Heat vegetable oil in a wok over medium heat 1 minute.
Stir-fry marinated ground pork 2 minutes until browned.
Add garlic, hot bean sauce, bean curd and red peppers, if desired.
Stir-fry 1 minute.
Pour seasoning sauce into wok.
Stir-fry until sauce thickens slightly.
Sprinkle with green onion and sesame oil; stir to mix.
Spoon bean curd mixture on a plate.
Sprinkle with Peppersalt.
