Bean Curd Sandwiches Recipe

 1 teaspoon rice wine or dry sherry

 All purpose flour1/3 Cup (16 tbs) (Marinade:)
 Soy sauce2 Tablespoon (Seasoning sauce:)
 Salt1/2 Teaspoon (Seasoning sauce:)
 Chicken broth1/4 Cup (16 tbs) (Seasoning sauce:)
 Cornstarch1 Teaspoon (Seasoning sauce:)
 Water1/4 Cup (16 tbs) (Seasoning sauce:)
 Vegetable oil1/4 Cup (16 tbs) (Seasoning sauce:)
 Green onion2 Tablespoon, chopped (Seasoning sauce:)
 1-1/2 teaspoons minced fresh ginger root
 Sesame oil2 Teaspoon (Seasoning sauce:)

Directions

Lightly chop ground pork with a cleaver.
Combine marinade ingredients in a small bowl.
Add ground pork; mix well.
Let stand 10 minutes.
Cut each bean curd cake into four 1-1/4-inch squares.
Cut each square into 3 slices.
Sprinkle each slice with flour.
Spread about 1-1/2 tablespoons pork mixture on 12 slices of bean curd.
Top with remaining bean curd slices to make 12 sandwiches.
Combine ingredients for seasoning sauce in a small bowl.
Mix well and set aside.
Sprinkle each sandwich with flour.
Heat vegetable oil in a large skillet over medium heat 30 seconds to 1 minute.
Fry bean curd sandwiches until lightly browned on one side.
Turn with a spatula and fry until other side is golden brown.
Add green onion and ginger root.
Carefully stir-fry 15 seconds.
Stir in seasoning sauce.
Reduce heat to low.
Cover and simmer 5 minutes.
Stir in sesame oil.
