Ingredients

 Water7 Cup (16 tbs)
 1 pound dried Great Northern or lima beans
 Whole tomatoes1 Can (10oz)
 Onion1 Large, chopped
 Garlic2 Clove (5gm), finely chopped
 Salt1 Teaspoon
 Pepper1/2 Teaspoon
 1 pound kielbasa or Polish sausage, cut into 1/4-inch slices
 2 medium carrots, cut into 1/4 inch slices
 2 medium stalks celery, cut into 1/4 inch slices

Directions

Heat water and beans to boiling in 4-quart Dutch oven; boil 2 minutes.
Remove from heat; cover and let stand 1 hour.
Add tomatoes (with liquid), onion, garlic, salt and pepper.
Heat to boiling; reduce heat.
Cover and simmer until beans are tender, about 2 hours.
Skim fat if necessary.
Cover and refrigerate no longer than 3 days.
