Marinate & Fry Pork Spare Ribs Recipe Video

These barbecued pork ribs or spare ribs are made in authentic Thai style. A filling meal by itself, the bbq pork spare ribs could also made a great addition to an elaborate meal.

Ingredients

 
1 Kg. Pork Ribs
 
1 Large bulb garlic (chopped)
 
4 Coriander roots finely chopped (or stems)
 
3 tbs Seasoning sauce
 
2 tbs Fish sauce
 
½ tbs Black pepper
 
3-4 Cups sunflower oil

Directions

Mix the garlic, coriander roots, seasoning sauce, fish sauce and black pepper in a bowl.
Marinade the pork in this mix for up to 24 hours.
Heat oil in a wok or deep pan at medium/high.
Add in marinated pork and garlic, fry until dark golden brown.
Remove and drain using a sieve or a slotted ladle. (If the oil is too hot, they will darken and/or burn before they're cooked properly)
When the ribs are done, serve up with the garlic sprinkled on top.
