Recipe Story

Stephen Linn grills up an easy, delicious tailgate pizza.

Ingredients

 
Skinless, boneless chicken breasts - 2
 
Salt - to taste
 
Pepper – to taste
 
Pizza crust (store-bought dough is fine) - 1 (14-inch)
 
Barbecue sauce - ¾ cup
 
Red onion - ½, thinly sliced
 
Mozzarella cheese - 6 ounces, shredded
 
Parmesan cheese - 3 ounces, shredded

Directions

GETTING READY
1 Preheat the grill to medium–high.
2 Sprinkle the chicken breast with salt and pepper.
3 Grill until the internal temperature is 150ºF.
4 Remove from the grill, let cool, and cut into ½-inch think slices.

MAKING
5 On a 14-inch pizza pan, place the crust.
6 Spread the barbecue sauce evenly over the crust, and top it with the onions and chicken.
7 In a bowl mix the cheeses, and sprinkle them evenly on the pizza.
8 Place the pizza on the grill and cook for 10 to 15 minutes, until the crust is crisp and the cheese has melted.

SERVING
9 Cut the pizza into even slices and serve at once.
