Ingredients
2 lbs eye of round (cut in chunks)
1 tbsp kosher salt
1 tbsp peppercorn
bell peppers and onion
medium sized potatoes (cut in half)
olive oil
chives
cilantro
pepper
Directions
In a medium bowl, put chunks of eye of round.
Marinade for 12 hours.
On a plate, combine kosher salt and peppercorn.
Mix them.
Coat eye of round on the plate.
Start fire.
Skewer bell pepper and onion together.
Skewer potatoes.
Put the skewers on a plate side-by-side.
Sprinkle them with olive oil, chives, cilantro and pepper.
BBQ skewered potato and beef.
Cover potato with a foil.
Cover BBQ.
Cook at 400 degrees F (204 degrees C).
Dip beef in marinade and grill (red in center and juicy when cut).
Grill pepper/onion for 5 minutes (turn once).
