Ingredients
2 tbsp. butter
2 onions, chopped
1 tbsp. flour
1 No. 1 can tomatoes
1 green pepper,chopped
1/4 tsp. thyme
1 bay leaf
2 c. chopped cooked ham
1 clove of garlic, chopped
1 tbsp. chopped parsley
Salt and pepper
1 c. rice
2 c. cooked shrimp
2 c. oysters and liquid
Directions
"Melt butter in skillet; add onions.
Cook over low heat until browned.
Add flour gradually; stir until mixture is browned lightly.
Add 2 cups water; cook, stirring constantly, until smooth and thickened.
Add tomatoes, green pepper, garlic, parsley, salt, pepper, rice and herbs; cover.
Place over low heat; simmer 45 minutes or until rice is tender and small amount of liquid remains.
Add ham, shrimp and oysters with liquid; cover.
Simmer until edges of oysters are curled.
