Bay Salad Dressing Recipe
Ingredients
3 tsp liquid shortening
1/2 cup onion, finely chopped
2 tsp fresh parsley, finely chopped
2 tsp celery with leaves, finely chopped
1 bay leaf
Dash thyme, mace, rosemary each
2 tsp white wine
1 cup yogurt
2 tsp skim milk
Salt and pepper to taste
Directions
Heat liquid shortening in small skillet.
Add onion, parsley, celery, and seasonings.
Cook over very low heat, stirring constantly, for 15 minutes.
Do not allow vegetables to burn.
Set aside to cool.
Add wine; stir to mix.
Allow to rest 30 minutes.
Strain, reserving liquid.
Beat yogurt with skim milk.
Continue beating, adding wine liquid.
Add salt and pepper.
Blend.
Add onion, parsley, celery, and seasonings.
Cook over very low heat, stirring constantly, for 15 minutes.
