Bauernfruhstuck Recipe

Ingredients
1/4 cup (1/8 lb.) butter or margarine
2 cups diced uncooked potatoes
1/4 cup finely chopped onion
1 cup diced ham
1/4 cup chopped parsley
6 eggs
3/4 teaspoon salt
Dash pepper
2 tablespoons half-and-half (light cream) or milk
1/2 cup shredded jack cheese
Directions
Melt butter in a 9 or 10-inch frying pan.
Add potatoes and onion; cover and cook over medium-high heat, stirring occasionally to brown evenly, for about 20 minutes or until potatoes are tender and golden.
Add ham and cook a few minutes longer until lightly browned.
Sprinkle mixture with parsley.
Reduce heat.
Beat together eggs, salt, pepper, and light cream until well blended.
Pour egg mixture over potatoes and ham.
Cover and cook until eggs are almost set (about 10 minutes), slipping spatula around edge of pan occasionally to allow egg mixture to run down.
