Ingredients

 Rice flour1 Cup (16 tbs)
 Salt1/8 Teaspoon
 Coconut milk1/2 Cup (16 tbs)
 Oil1 Tablespoon
 Egg yolks2
 Egg whites-2 -beaten stiff
 Coconut-1/2 cup- flaked
 Bananas-5-peeled and sliced in 1-inch lengths
 Fat for deep frying

Directions

MAKING
1. In a large bowl, sift the flour and salt together
2. Add the coconut milk while beating well. Once the milk is incorporated, add the egg yolks to the mixture and beat till smooth
3. Add the egg whites and the coconut to the mixture and beat well
4. Dip the bananas into the batter
5. Deep fry the bananas in batches in hot oil that has been heated to 880°

SERVING
6. Dust with icing sugar and serve hot immediately
