Basque Style Turkey Tenderloins Recipe

Ingredients

 Olive oil1 Tablespoon
 Dried basil leaves1 Teaspoon
 Garlic2 Clove (5gm), minced
 1 can (10 1/2 oz.) condensed
 French onion soup
 White wine1/4 Cup (16 tbs)
 2 lbs. turkey tenderloins, diagonally sliced 1/2 inch thick
 Prunes1/2 Cup (16 tbs), pitted
 Dried apricots1/2 Cup (16 tbs)

Directions

In 10-inch square casserole, combine olive oil, basil and garlic.
Cover.
Microwave at High for 1 minute.
Stir in soup and wine.
Add turkey, prunes and apricots, stirring to coat.
Re-cover.
Microwave at 70% (Medium High) for 18 to 22 minutes, or until turkey is cooked through and no longer pink, stirring twice.
Remove turkey and fruit with slotted spoon to platter.
