Basque Eggs Recipe
Ingredients
| Cooked ham | 1/2 Pound, diced | |
| Green pepper | 3 Tablespoon, chopped | |
| Onion | 2 Tablespoon, chopped | |
| 1 peeled and diced tomato | ||
| 1/4 cup sliced pimento-stuffed olives | ||
| Garlic | 1/8 Teaspoon, chopped | |
| Celery | 2 Tablespoon, chopped | |
| Butter/Margarine | 1 Tablespoon | |
| Eggs | 4 standard | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
Directions
MAKING
1. Take a ceramic skillet, melt butter, sauté green pepper, onion, ham, tomato, garlic, celery and olives and cook for about 7 minutes, stirring once in 2 minutes.
2. Take a dish, add broken eggs and beat well with pepper and salt.
3. Stir in to the skillet and cook for about 4 minutes or till eggs are set.
SERVING
4. Serve hot.
