Ingredients

 1 cup uncooked basmati rice, rinsed to remove small stones or seeds
 2 cups water, nonfat chicken broth, or vegetable broth
 Parsley1 Tablespoon, chopped
 Black pepper1/4 Teaspoon

Directions

Place rice and water or broth in a large microwave-safe casserole.
Cover tightly.
Cook on high for 20 minutes.
Let stand, covered, for 5 minutes.
Stir in parsley and black pepper.
