1 medium onion, chopped
1 clove garlic, minced
2 tbs (30 ml) butter
1 3/4 cups (415 ml) water
3/4 tsp (4 ml) salt
1 cup (240 ml) Basmati Rice
1 tsp (5 ml) dried mint
1/4 cup (60 ml) chopped parsley
1/4 cup (60 ml) green onions, chopped
1/2 cup (120 ml) plain nonfat yogurt
Directions
In saucepan on low heat sauté onion and garlic in butter until soft.
Add water and salt and bring to a boil.
Add rice, lower heat and simmer for 15 minutes or until all the water has been absorbed.
Remove from heat.
Add mint, parsley, green onions and yogurt: and mix with rice.
