Basil Walnut Vinaigrette Recipe
Ingredients
1 Tbsp. Dijon mustard 15 mL
1/3 c. red wine vinegar 75 mL
3/4 c. chopped fresh basil
Salt
Ground black Pepper 175 mL
1 c. best quality olive oil 250 mL
1/2 c. walnut pieces 125 mL
Directions
Combine the mustard, red wine vinegar and basil in the bowl of a food processor fitted with a steel blade.
Add the salt and pepper to taste.
Process 1 minute; shut off and scrape down bowl.
Process 30 seconds and leave the motor running while you slowly pour in the oil.
When all the oil has been added, drop in the walnuts and shut off the machine.
Do not over process.
Cover and refrigerate at least 2 hrs.
