Basil Chicken And Potatoes Recipe
Ingredients
4 eggs
8 cups cubed cooked chicken breast
1/2 cup good quality olive oil
1/4 cup lemon juice
8 cups pared cubed cooked potatoes
4 cups fresh basil leaves, tightly Packed
1 1/3 cups mayonnaise
Salt and fresly ground black pepper to taste
1 cup plain yogurt
Red leaf lettuce for gamish
Directions
Combine eggs, 1/4 cup oil and lemon juice in food processor or blender and blend.
With motor running add remaining oil in thin, steady stream and process until thickened.
Add basil and process until pureed.
Add mayonnaise and blend.
Transfer to bowl and stir in yogurt.
Stir in chicken and potatoes.
Season to taste with salt and pepper.
Chill, overnight if desired.
Serve on bowl lined with red leaf lettuce.
NOTE TO COOK: Carry to party either in storage container or in serving bowl, covered with plastic.
If assembling at party, carry lettuce, already washed and drained, in plastic bag.
