Basic Tomato Sauce Recipe

Tomato Sauce is definitely the most popular sauce at my place. As my children almost always end up drowning their food with tomato sauce I prefer to make it myself. Here is a wonderful and unique Basic Tomato Sauce recipe that I have been using for ages!

Ingredients

 
1 large onion, finely chopped
 
2 cloves, garlic, crushed
 
2 rashers streaky bacon, removed and chopped
 
30g butter
 
1 large carrot, grated
 
1 kg ripe red tomatoes, skinned, seeded and chopped or 1can tomatoes
 
1/2up dry white or red wine or 1/4up sherry
 
Bouquet garni
 
Salt
 
Freshly ground black pepper

Directions

Cook onion, garlic and bacon gently in butter until onion is soft. Add remaining ingredients, chopping canned tomatoes and removing as many seeds as possible. Simmer partly covered for 45 minutes, stirring frequently. Add a little more water if needed. Sauce should be thick, but can be thinned as you wish with beef or chicken stock when you use it. Remove bouquet garni, correct seasoning and store, covered, in refrigerator or freezer.
This is a good sauce to make in quantity and freeze — the recipe can be doubled. Use it as the basis of a superb homemade soup, so different from the canned variety; serve it with sausages or hamburgers, grilled meats, fish or chicken, heat it with mussels, prawns or canned fish and serve over rice or noodles; cover frankfurters with it, top with cheese and bake; stir into browned minced beef and serve on toast or with mashed potato.
