2 cups sifted all purpose flour
 
3 egg yolks
 
2 cups ice water

Directions

Sift flour 3 times.
Combine egg yolks and water in large bowl over ice; beat with whisk until well blended.
Add flour gradually, stirring and turning mixture from bottom with a spoon.
Do not overmix.
Flour should be visible on top or batter1 will become gummy.
Keep batter over ice while dipping and frying.
Cold beer can be substituted for water, if desired.
