Ingredients

 
4 cup zucchini, thinly sliced
 
1 cup carrot, coarsely shredded
 
1 cup onion, chopped
 
3/4 cup celery, bias-sliced
 
1 cup mushrooms, sliced
 
1/2 med. green pepper, cut into thin strips
 
1/2 tsp. garlic powder
 
1/4 tsp. basil
 
1 dash black pepper
 
1 cup chicken stock
 
1/4 cup chili sauce
 
2 tsp. prepared mustard
 
2 med. tomatoes, cut into wedges

Directions

1. In a large nonstick skillet, place zucchini, carrot, onion, celery, mushrooms, green pepper, garlic powder, basil, and black pepper. Cover with chicken broth and cook over medium heat until vegetables are tender. Stir occasionally.
2. Combine chili sauce and mustard. Stir into vegetable mixture. Add tomato wedges and cook about 5 minutes longer. Season to taste
