1/4 cup chopped onion
 
2 tablespoons fat
 
2 cups soft stale bread crumbs
 
2 tablespoons chopped parsley
 
1/2 teaspoon salt
 
1/8 teaspoon pepper

Directions

Brown onion lightly in fat.
Add bread crumbs and seasonings, and heat slightly.
Makes about 2 cups.
Note: For use with beef, as in rolled flank steak, add 1/2 teaspoon savory or marjoram.
For veal, spice should be thyme or savory.
For pork, usesage or savory, plus 2—3 tablespoons chopped tart apple.
For lamb, add 4 tablespoons chopped fresh mint or 1/2 teaspoon thyme.
