Basic Blintzes Recipe

Ingredients
| Cottage cheese | 1/2 pound | |
| Egg yolk | 1 | |
| Sugar | ||
| Flour | 1 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Eggs | 2 Small | |
| Milk | 1 1/2 Cup (16 tbs) | |
| Butter | ||
Directions
MAKING
1) In a bowl, combine together the cottage cheese, egg yolk and 1/3 cup of sugar for the filling
2) In another bowl ,mix together the flour, salt and 2 tablespoons of sugar
3) Using a fork, beat the egg well and add the flour mixture with the milk and beat till smooth
4) Heat a skillet and lightly grease it with butter
5) Pour enough batter into skillet to cover the bottom and tilt the skillet to spread the batter evenly
6) Place a tablespoon of filling onto each pack cake and roll the pancake
7) Repeat till all the batter is used
8) Place in a greased baking dish and bake for 15 minutes at 350F
SERVING
Serve with maple syrup and a some cream
