Basic Wild Rice Stuffing Recipe
Ingredients
| 1 medium-size yellow onion, peeled and minced | ||
| Celery | 1/3 Cup (16 tbs) | |
| 1/4 cup bacon drippings | ||
| Cooked ham | 1/4 Cup (16 tbs), minced | |
| 1 cup wild rice, washed well | ||
| Rosemary | 1/2 Teaspoon | |
| Water or chicken broth | 3 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
MAKING
1. Take a heavy, large saucepan, add celery and onion to drippings place on moderate heat and sauté for 5 to 8 minutes to turn pale golden. Stir in ham and stir fry for a minute. Add rosemary and rice and stir fry for 30 seconds.
2. Mix in broth, pepper and salt, cover the mixture and allow to come to boil. Remove the lid and without stirring allow the mixture to boil gently for half an hour till rice turns just tender.
3. Drain the rice, without covering, place on minimum heat and allow to dry for 2 to 3 minutes, while shaking the pan occasionally. Add salt to taste.
SERVING
4. Use as filling.
