Basic Tomato Sauce Recipe

My passion for basic tomato sauce grew during high school days. Stock up on bags full of vegetable as you will want to make this basic tomato sauce a lot. I prepare this yum basic tomato sauce as a side dish every month or even more often. I will look forward to your feedback.

Ingredients

 
12 large ripe tomatoes, peeled and chopped
 
2 green peppers, seeded
 
2 onions, chopped
 
2 carrots, chopped
 
6 celery stalks, diced
 
2 tablespoons snipped fresh chives
 
2 tablespoons chopped parsley
 
2 tablespoons chopped fresh basil
 
2 cloves garlic, finely chopped
 
Salt and freshly ground black pepper

Directions

1. Combine all the ingredients in a stainless steel, or porcelainized steel, pan or casserole. Bring to a boil and simmer, uncovered, for 45 minutes. Puree (in a blender or food processor), if desired. Season with salt and pepper to taste.
2. Refrigerate overnight before using or freezing for future use.
