Basic Tomato Sauce Recipe
Ingredients
12 large ripe tomatoes, peeled and chopped
2 green peppers, seeded
2 onions, chopped
2 carrots, chopped
6 celery stalks, diced
2 tablespoons snipped fresh chives
2 tablespoons chopped parsley
2 tablespoons chopped fresh basil
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
Directions
1. Combine all the ingredients in a stainless steel, or porcelainized steel, pan or casserole. Bring to a boil and simmer, uncovered, for 45 minutes. Puree (in a blender or food processor), if desired. Season with salt and pepper to taste.
