Ingredients
1/2 cup milk, scalded
1/3 cup honey or sugar
1 1/2 tsps. salt
1/4 cup butter
1 egg, beaten slightly
1/2 tsp. grated lemon rind
1 1/4 ounce package active dry yeast
1/4 cup warm water (105-115°F.)
2 3/4 cups (about) Elam's
Unbleached White
Flour with Wheat Germ
Directions
Combine first 4 ingredients in bowl; mix and cool to lukewarm.
Stir in egg and lemon rind.
Dissolve yeast in floured 2 1/2 or 3-inch cookie cutter.
Brush tops of rounds with melted butter.
Using back of dinner knife blade make an indentation across each round of dough to one side of center and fold round in half.
Press edges together lightly.
Arrange rolls close together in rows on greased baking sheet.
Brush tops with melted butter.
Cover; let rise until double in size.
Bake in moderate oven (375°F.) until done and brown, 15 to 18 minutes.
