Basic Strained Yogurt Recipe

| Plain non-fat yogurt | 1 1/2 Cup (16 tbs) | |
| 4 English muffins, or 4 slices of bread, toasted | ||
| Fruit spread | 8 Teaspoon | |
Directions
Put the yogurt in the strainer over a bowl, or you can use a coffee filter, muslin or a paper towel and place in a small sieve over a bowl.
Cover and let it drain in the refrigerator, for 5 hours or overnight.
The liquid whey drains into the bowl, leaving you with a thick creamy yogurt cheese.
To Serve: Spread 1 teaspoon (5 ml) of the strained yogurt on each toasted muffin half and spread with 1 teaspoon (5 ml) of the marmalade.
