Basic Risotto Recipe
No one can stop at just one is my claim for this recipe of Basic Risotto. It is a well-liked Side Dish to be served at the Italian table. The flavor of Rice makes this dish all the more appetizing. Trust me and whip this dish now.
Ingredients
1-2 teaspoons olive oil
1 medium Spanish onion finely chopped
2 cloves garlic, sliced
1 1/2 cups Arborio rice (do not substitute any other kind)
1/2 cup white wine
4 1/2 cups chicken or vegetable stock Parmesan cheese, freshly grated
Salt and pepper
Directions
1. Heat oil in a large heavy-bottomed saucepan over medium-low heat and add onion and garlic. Cook until golden, or about 10 minutes.
2. Add rice and saute 1 minute.
3. Add wine and simmer until it has been completely absorbed, stirring constantly and slowly.
4. Add stock, 1/2 cup at a time, until all the stock has been absorbed, continually stirring.
