Ingredients
2 pounds boneless lean lamb (shoulder or leg), cut into 1 1/2 inch cubes
1/3 cup olive oil or salad oil
3 tablespoons lemon juice
1 large onion, finely chopped
2 bay leaves
2 teaspoons oregano leaves
1/2 teaspoon pepper
Directions
Place cubes of lamb in a bowl.
In another bowl, combine oil, lemon juice, onion, bay leaves, oregano, and pepper; pour over lamb cubes.
Cover and refrigerate for 2 to 4 hours.
Lift lamb from marinade and drain briefly (reserve marinade).
Divide meat evenly among sturdy metal skewers and place on a lightly greased grill 4 to 6 inches above a solid bed of glowing coals.
Cook, turning and basting with reserved marinade, for 20 to 25 minutes or until lamb is well browned on all sides but still pink in center when slashed.
