Basic Recipe Fish Steaks & Fillets Recipe
Ingredients
6 fish steaks or fillets cut 1 inch thick
Marinade or baste
Directions
Wipe fish with damp cloth.
If you prepare a marinade (see Favorite Seafood Marinades & Bastes, at right), place fish in a large plastic bag in a rimmed baking pan and pour in marinade.
Twist-tie bag closed, refrigerate, and marinate for 1 to 2 hours.
Lift fish from marinade and drain briefly (reserve marinade).
Arrange fish on well-greased grill 4 to 6 inches above a solid bed of low-glowing coals.
Cook, turning once and basting frequently with reserved marinade or other baste, for 15 to 20 minutes or until fish flakes readily when prodded in thickest portion with a fork.
