Basic Palacsinta Shells Recipe
Ingredients
| Eggs | 3 | |
| All purpose flour | 1 Cup (16 tbs) | |
| Salt | 1/8 Teaspoon | |
| Milk | 1 Cup (16 tbs) | |
| Club soda | 1/2 Cup (16 tbs) | |
| Oil or butter | ||
Directions
Beat eggs in blender on low speed about 10 seconds.
Add 1/2 cup flour with salt and mix again.
Add remaining flour with milk and blend well.
Transfer to mixing bowl and add soda (batter should be consistency of whipping cream).
Heat 7- or 8-inch skillet over medium-high until hot enough that a few drops of water will "dance" on surface.
Coat skillet lightly with oil or butter.
Add enough batter to cover bottom of pan evenly.
Cook until edges of pancake are lightly browned, about 1 minute.
Turn and cook other side for 30 seconds.
Turn out onto plate and cover with sheet of waxed paper.
Repeat with remaining batter, coating pan with oil or butter before cooking each pancake, and stirring through batter before adding to pan.
Stack palacsintas between sheets of waxed paper.
