Ingredients

 Sugar2 Cup (16 tbs)
 Water1 Cup (16 tbs)
 Dark corn syrup1/4 Cup (16 tbs)
 Vanilla1/2 Teaspoon
 1 cup coarsely chopped walnuts, pecans, toasted almonds, hazelnuts, or blanched, roasted, unsalted peanuts

Directions

Mix sugar, water, and syrup in a 1-quart heavy saucepan, set over moderately low heat, and heat and stir until sugar dissolves.
Raise heat and boil gently, uncovered, without stirring 3 minutes; stir once and, if the consistency of maple syrup, remove from heat; if not, boil 1 minute longer.
Cool slightly and add vanilla and nuts.
Stir just to mix and serve warm or cool over ice cream.
