Basic Nut Soup Recipe
Ingredients
| Butter | 1 Ounce | |
| Onion | 1 | |
| Carrot | 1 , chopped | |
| Potato | 1 Large, chopped | |
| Vegetable stock | 1 Pint | |
| Nuts | 2 Ounce | |
| Parsley | 1 Teaspoon, chopped | |
| Honey | 1/2 Teaspoon | |
| Sea salt and freshly ground black pepper | ||
Directions
1. Melt the butter in the pan and fry the chopped onion over a gentle heat until soft. Add the chopped carrot and potato and the stock and simmer for 20 minutes.
2. When this is ready liquidize together with the nuts.
3. When smooth add the parsley, honey, and seasoning, and bring to simmering point before serving.
