Basic Muffins Recipe
In my opinion there's not another recipe better than this Basic Muffins that is the reason I am so thrilled about introducing it to you. I just love Snack recipes and this dish is my only favorite amongst them. Make this Basic Muffins popular amongst your friends and let them know how good it tastes.
Ingredients
The 2-egg Batter
2 cups (500 mL) flour
2 1/2 tsp (12 mL) baking powder
1/2 tsp (2 mL) salt
3 tbsp (50 mL) sugar
2 eggs
3/4 cup (200 mL) cold milk
1/4 cup (60 mL) butter or margarine, melted
Directions
€¢ Sift together in a bowl the flour, baking powder, salt and sugar.
€¢ Beat together the eggs and milk, pour over the flour mixture. Stir to just moisten the dry ingredients.
€¢ Melt the butter or margarine 2 minutes at HIGH.
€¢ Pour over the batter and stir until the dry ingredients are thoroughly moistened but still lumpy. In other words, just enough to blend the two.
€¢ Pour into prepared muffin pans, only 2/3 full.
€¢ To taste, sprinkle top lightly with finely chopped nuts or cinnamon and sugar mixed together or toasted coconut or 1 teaspoon (5 mL) each of brown sugar and cocoa mixed together.
€¢ For 6 muffins, microwave at HIGH 2 to 3 minutes. The variation in baking time depends on the type of muffins
