Basic Muffins Recipe
These basic muffins are flour and egg muffins. Combined with milk for moisture with sugar to taste, these basic muffins are baked in the oven for a lovely and light snack.
Ingredients
Nonstick cooking spray
1 3/4 cups sifted all purpose flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
2 tablespoons unsalted margarine
3/4 cup skim milk
1 large egg
Directions
Preheat the oven to 400°F.
Using 1 large or 2 small muffin pans, lightly coat 12 2 1/2 inch cups with the cooking spray.
Combine the flour, sugar, and baking powder in a large bowl; set aside.
Melt the margarine in a small saucepan over moderate heat; pour it into a small bowl and whisk together with the milk and egg.
Add to the flour mixture and stir just until the dry ingredients are moistened.
Spoon the batter into the muffin cups, filling them about half full.
Bake for 15 minutes or until a toothpick inserted in the center of a muffin comes out clean.
