Basic Granola Recipe
Ingredients
| Apple Juice | 1/2 Cup (16 tbs) | |
| Raisins | 1/4 Cup (16 tbs) | |
| 2 cups old-fashioned rolled oats | ||
| 1/2 cup soy flakes | ||
| 1/4 cup barley flakes | ||
| 1/4 cup nonfat dry milk | ||
| Wheat germ | 1/4 Cup (16 tbs) | |
| Rice Bran | 1/4 Cup (16 tbs) | |
| 1/4 cup finely chopped walnutsor almonds | ||
| Ground cinnamon | 1/2 Teaspoon | |
Directions
In a 2-cup glass measure, combine the apple juice and raisins.
Microwave on high for 2 minutes.
Remove from the microwave, cover with foil, and set aside.
In a large bowl, combine the oats, soy flakes, barley flakes, dry milk, wheat germ, bran or rice bran, walnuts or almonds, and cinnamon.
Drain the liquid from the raisins and pour it over the dry ingredients (reserve the raisins).
Toss until the granola is well moistened.
Place a piece of parchment on the floor of the microwave or on the turntable.
Spread half of the granola mixture in a thin layer on the paper.
Microwave on high for 2 minutes.
Stir in half of the raisins and microwave on high for 20 seconds.
Transfer to a platter or baking sheet lined with paper towels (to absorb excess moisture), and allow to cool.
Repeat with the remaining granola and raisins.
Store in a tightly closed container in the refrigerator or freezer.
