Basic Eclairs Recipe

Ingredients

 
1/2 cup butter or margarine
 
1 cup boiling water
 
1 cup all-purpose flour
 
1/4 teaspoon salt
 
4 eggs

Directions

In saucepan melt butter in boiling water.
Add flour and salt all at once; stir vigorously.
Cook and stir till mixture forms a ball that doesn't separate.
Remove from heat; cool slightly.
Add eggs, one at a time; beat after each addition till smooth.
Shape on greased baking sheet as directed in recipe.
Bake at 400° till golden and puffy, 30 to 35 minutes.
Remove from oven; split.
Cool on rack.
