Basic Crepes Recipe
Ingredients
3 eggs
1 teaspoon honey or maple syrup
2 tablespoons brandy
1 teaspoon vanilla
2 tablespoons melted butter
2/3 cup milk
1/3 cup whole wheat pastry flour
1/8 teaspoon salt
Directions
In a mixing bowl, beat eggs, add honey or maple syrup, brandy, vanilla, butter, and milk.
Beat with electric beater at low speed until well mixed.
Add flour and salt, and continue to beat until batter is the consistency of light cream.
Allow batter to stand for an hour or two.
When ready to bake, heat a 6-inch crepe pan or small skillet and oil it.
Pour in about 1 1/2 tablespoons of the batter, and tip the pan to spread the batter over the entire surface.
Cook crepe until it shakes loose from the bottom of the pan.
Turn and brown lightly on reverse side.
