Basic Chicken Broth Recipe
Ingredients
| Water | 8 Cup (16 tbs) | |
| 2 1/2 pounds raw chicken bones | ||
| 3 green onions (including tops), cut in half | ||
| 8 thin slices fresh ginger | ||
| Pepper | 1 Pinch | |
| Salt | To Taste | |
Directions
Cooking In a large pot, heat water and chicken bones to boiling.
Skim off any foam that forms on the top.
Reduce heat, cover, and simmer for 1 1/2 hours.
Add green onions, ginger, pepper, and salt and simmer for 30 minutes.
Strain broth, discarding bones and seasonings.
Skim and discard fat from broth.
To Make Rich Chicken Broth: To make a richer, deeper-flavored broth for soups, stews, and sauces, substitute chicken broth for the water in the above recipe.
Another way is to add pork bones and ham trimmings to the chicken bones.
