Basic Brown Or White Stew Recipe

Ingredients
1 lb. meat without bone or 1 1/2 lb. meat with bone
3/4 pt. stock or water or use some beer, wine or cider
3 Tbs. flour
Pinch of thyme
1 lb. mixed vegetables
1 bay leaf
Sprig of parsley
2 oz. fat or oil
1 tsp. salt
Pinch pepper
Directions
Cut the meat in pieces, removing as much fat as possible.
Prepare and slice or dice the vegetables.
Put the flour in a paper or polythene bag and shake the meat in it until well coated.
Heat the fat or oil and fry the meat brown; add the vegetables and fry for a few minutes longer.
Add any remaining flour and then stir in the liquid and seasonings.
Cook slowly until the meat is tender.
Add gravy browning if necessary for a good rich colour.
If dumplings are added they should go in half an hour before serving.
