Ingredients

 1 medium-size yellow onion, peeled and minced
 Celery1/2 Cup (16 tbs), minced
 Butter/Margarine1/4 Cup (16 tbs)
 Soft bread crumbs2 Cup (16 tbs)
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Parsley1 Tablespoon, minced
 1/4 teaspoon each thyme and sage or 1/2 teaspoon poultry seasoning
 1 egg, lightly beaten

Directions

MAKING
1) Take a large, heavy skillet and put butter in it.
2) Sauté onion and celery in the butter over moderate heat for 5 minutes till they turn pale golden.
3) Add in all remaining ingredients and toss well and mix.

SERVING
4) Use as a stuffing for fish.
