Barley Lentil Soup Recipe
Here is a hearty and warming recipe for Barley Lentil Soup, which is also my personal favorite. A very quick and easy soup to prepare that is a storehouse of all the nutrients for your day to go great. Give this Barley Lentil Soup a try and then you will agree!
Ingredients
Barley 1/2 cup
Lentils 3/4 cup
Onion, sliced finely 1 medium
Tomatoes, chopped 2
Ginger, chopped 1 inch piece
Rock salt to taste
Pepper powder to taste
Fresh coriander, chopped fine for garnish 2 sprigs
Directions
Fill a large pan with 6 cups of water and place the barley in it.
Bring to a boil and let it simmer for 10 15 minutes.
Clean, wash and add the dal, vegetables and the ginger to the barley and cook till soft.
Mash well and adjust salt and pepper.
Serve in soup bowls and place a small dab of butter on top if desired.
Garnish with the fresh coriander and serve hot.
