Barley Lamb Hotpot Recipe

Ingredients
900 g (2 lb) stewing lamb, cubed
1 parsnip, diced
2 turnips, diced
1 onion, chopped
2 carrots, finely diced
2 sticks celery, chopped
1 leek, chopped
1.8 litres (3 pints) (7 1/2 cups) water
bouquet garni
salt and pepper
75 g (3 oz) (3/8 cup) pearl barley, soaked overnight in cold water
5 g (1 tablespoon) chopped parsley
Directions
1Blanch the lamb in boiling water for 5 minutes.
Refresh in cold water and drain.
2 Place the meat in a large pan and add the vegetables and the water.
Add the bouquet garni and season with salt and pepper.
Bring to the boil and simmer for 1/2 hour.
3 Add the barley, and simmer for 1 hour until the meat and barley are tender, adding extra water if needed.
Remove the bouquet garni and check the seasoning.
4 When ready to serve, sprinkle with chopped parsley.
