Barley, Ground Lamb Soup Recipe
Ingredients
3 tbsp (50 mL) butter or bacon fat
1 1/4 cups (300 mL) carrots, finely diced
1/2 cup (125 mL) turnip, finely diced
8 cups (2 L) hot water
3/4 cup (200 mL) pearl barley
1/2 lb (250 g) ground lamb
Salt and pepper to taste
Parsley, chervil or chives, minced
Directions
Place the fat in a large microwave-safe bowl and melt 1 minute at HIGH.
Add the diced carrots and turnip, stir well.
Add the hot water, barley and ground lamb.
Stir well Add salt and pepper.
Cover and microwave 10 minutes at HIGH.
Reduce the heat to MEDIUM-HIGH and microwave 45 minutes.
Stir twice during the cooking period.
Serve with chopped chervil, parsley or chives.
