Ingredients
3 lbs. lean ground beef
3 to 3 1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons cooking oil
6 onions, chopped
1 cup chopped celery
2 tablespoons chili powder
2 qts. tomato juice
2 cups hot water
1 cup barley
Directions
Mix the ground beef with salt and pepper.
Heat the oil in a large heavy saucepot.
Add the beef and onions, separating the meat into pieces; cook about 5 minutes, stirring occasionally.
Stir in the celery, chili powder, tomato juice, and water.
Simmer, covered, about 2 hours.
Skim off any excess fat, if desired.
Stir in the barley and cook, covered, 1 1/2 hours.
