Barley With Corn And Red Pepper Recipe

Barley with corn and red pepper is a cooked barley preparation. Broth cooked, the barley and vegetables is flavored with red pepper and onions. It is finished with a hint of lime juice and coriander to taste. Served as a brunch side it is rich in natural protein and fibre.

Ingredients

 
1/2 cup Italian Dressing
 
1 medium red pepper, chopped
 
1/2 cup chopped onion
 
1 cup uncooked pearled barley
 
1 3/4 cups chicken broth
 
1 1/4 cups water
 
2 tablespoons finely chopped coriander (cilantro) or parsley
 
1 tablespoon lime juice
 
1/2 teaspoon ground cumin
 
1/8 teaspoon pepper
 
1 can (7 ounces) whole kernel corn, drained

Directions

In large saucepan, heat Italian dressing and cook red pepper with onion over medium heat, stirring occasionally, 5 minutes or until tender.
Stir in barley and cook, stirring constantly, 1 minute.
Stir in broth, water, coriander, lime juice, cumin and pepper.
Simmer covered 50 minutes or until barley is done.
Stir in corn.
