Barley Salad Recipe

Ingredients

 
1 cup quick-cooking barley
 
1 teaspoon salt
 
3 cups boiling water
 
2 cups slivered cooked chicken
 
2 celery stalks, sliced
 
1/2 cup sliced water chestnuts
 
1 small avocado, peeled and diced
 
1 tablespoon lemon juice
 
1/2 cup chopped red onion
 
2 tablespoons chopped parsley
 
1 cup plain yogurt
 
2 tablespoons soy sauce
 
1/4 teaspoon freshly ground black pepper

Directions

1. Stir the barley into the salt and water mixture. Cover and simmer for 12 minutes, or until the barley is tender, stirring once or twice. Drain and cool.
2. Add the chicken, celery, water chestnuts, avocado tossed with lemon juice, the onion, parsley, yogurt, soy sauce, and pepper to the cooled barley.
