Barley Pilaf Recipe

Ingredients
1 3/4 cups (440 mL) barley
4 tbsp (60 mL) butter
2 onions, minced
1/2 lb (250 g) mushrooms, chopped
3 1/2 cups (875 mL) consomme
1/2 tsp (2 mL) salt
Directions
€¢ Place 2 tablespoons (30 mL) of the butter in a microwave-safe bowl and melt 1 minute at HIGH.
€¢ Add the onions and mushrooms and microwave 1 minute at HIGH.
€¢ Remove onions and mushrooms from butter, draining them well, and place in a microwave-safe baking dish.
€¢ Add the remaining 2 tablespoons (30 mL) of butter to the melted butter and microwave 1 minute at HIGH.
€¢ Stir in the barley. Microwave 1 minute at HIGH, stir. Add the barley to the onions and mushrooms together with the consomme and salt, stir. Cover and microwave 20 minutes at MEDIUM, stirring midway through the cooking.
€¢ Add a little hot water, if necessary.
