Barbecued Pork With Bean Sprouts Recipe

Ingredients

 
1 lb lean pork
 
1 scallion
 
2 X 1/4 inch slices fresh ginger
 
1/3 cup hoi sin or soy sauce
 
2 tablespoons dry sherry
 
1 clove garlic, crushed
 
2 tablespoons honey
 
1 tablespoon peanut oil
 
1 teaspoon very finely chopped fresh ginger
 
1/2 teaspoon salt
 
1 lb bean sprouts
 
1 teaspoon sugar

Directions

Cut pork into strips 2 inches by 1 inch by 1 inch.
Chop spring onion (scallion) finely; mix with the ginger, soy sauce, sherry and garlic in an oblong dish.
Add the pork strips, coat with the marinade and leave for 4-6 hours, stirring occasionally.
Drain the pork and rub it with honey.
Place on a greased rack in a roasting pan containing 1 inch of water.
Cook for 25 minutes at 350°F/180°C, Mark 4.
Slice into thin pieces.
Heat the oil in a saucepan, add the chopped ginger and salt and fry for 2 minutes.
Drain the bean sprouts, rinse in cold running water, drain again and add to the saucepan with 1 tablespoon of water and the sugar.
Heat gently, stirring until well mixed.
Add the pork, cover, and heat through.
